Takuma Inagawa heads a startup that's winning global plaudits with new sake varieties developed to complement global cuisines. From cask aging, to unorthodox additives, he uses various techniques to coax out flavors unlike any traditional rice wine. And having successfully expanded into several markets, he's now taking on the biggest of them all: the US.
